MADO means Maraş Dondurması, Maraş refers to the region Kahramanmaraş, and Dondurması refers to the ice cream made with 3 main ingredients: sugar, goat milk, and salep.
Mado started with Osman Ağa, the ancestor of the Kanbur family, who collected the snow from Kahramanmaraş Ahir Mountain and mixed it with delicious molasses and turned it into a refreshing dessert. The experiences and secrets were conveyed from grandfather to grandchild, and the flavor developed and refined over generations.
At one point Mado had to modernize and switch from the traditional hand-churned ice cream to machine-made, so they can provide ice cream all year round and in bigger quantities. Mado team worked day and night to make adjustments and maintain the same flavor.
Today, Mado is a Turkish restaurant chain with over 300 branches around the world and over 9 branches in the UAE.
